Melissa’s Meatless Spaghetti

Ingredients

Sauce

  • 1 small Onion, chopped
  • 2 large Garlic cloves, minced
  • 1 tbsp Coconut Oil or Olive Oil
  • 1 28-oz can Tomatoes, crushed or cut in small pieces
  • 2 6-oz cans Tomato Paste
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1 can Black Beans, drained

Pasta ideas

  • Whole-grain Spaghetti
  • 2 or 3 Zucchini, spiraled or grated
  • Spaghetti Squash, baked (use “meat” of the squash scraped out instead of noodles)

Instructions

  • Sauté Onion and Garlic in oil.
  • Add remaining ingredients except beans.
  • Cook on medium heat about 5 minutes stirring occasionally.
  • Add Beans.
  • Heat about 15-20 more minutes (or in crock pot on low several hours).
  • Enjoy with Pasta or Pasta Substitute.
