Avocado Corn Salad
Combine Just 3 Veggies for this Cool, Refreshing Salad!
- 1 avocado, cut in chunks
- 2 ears fresh corn, cut from cob
- 1 tomato, large chopped
- ½ lemon, juiced
- 1½ Tbsp olive oil
- Spike Seasoning (or unrefined salt) to taste
Cut avocado in half and then cut each half in squares into serving bowl.
Cut corn from cob into bowl.
Chop tomato and add to serving bowl.
Add remaining ingredients and stir.
Serve and ENJOY!
